EGGcelent Waffle Sandwich


Lots of times you will hear runners say eating after a long run repulses them, makes them feel nauseous or upsets their stomach. I, however, am certainly not one of those people. My post meal refuel is almost seen as a reward to me, as I am usually hungry throughout my long run days.

This EGGcelent Waffle Sandwich is one of my go-to post run recovery meals. You will most likely see this often posted on my site as it is truly EGGsquisite, in my opinion at least. I find that it provides me with the perfect amount of carb/protein replenishment. This picture was taken after an easy 6 mile run, therefore you will see the minimal ingredients I usually use. However, on longer run days I usually make 2 or 3 waffles (that’s right, talk about double whopper!), I’ll also throw in some more veggies (usually whatever I have left over from the night before, think sweet potatoes, kale, broccoli, peppers, ect).

Ingredients:

1-3 Vans Gluten Free Waffles

1 tablespoon of coconut oil

1 egg white

1 whole scrambled egg

1 handful of uncooked spinach

Sprinkle of salt and pepper to taste

Directions:

Place the waffles in the toaster oven as you make the omelette.

Pam the pan and heat 1 tablespoon of coconut oil on the pan.

Mix in 1 egg white, 1 whole egg, spinach and any other veggies you may like. (Think spinach replenishes iron levels, sweet potatoes replenish beta-carotene and Vitamin A, Kale is a great detoxifying agent, peppers are great for flavor and Vitamin K).

Place the cooked omelette inside the waffle and make a tasty EGGcelent Sandwich!
