Quinoa Buffalo Bites

Looking for a Sunday Funday appetizer recipe that you can feel good about eating? Then these baked Quinoa Buffalo Bites are for you. So easy, so yummy, nutritious, gluten free, vegetarian and BUFFALO .. what more could a girl ask for?

Ingredients:

Quinoa Bites:

1 Cup Cooked Quinoa

2 Large Eggs

1/4 Cup Grated Carrot

1/4 Cup Finely Chopped Celery

3 Tablespoons Buffalo Wing Sauce

1/4 Cup Shredded Cheddar Cheese

1/4 teaspoon Salt

Directions:

Preheat oven to 350°F

Spray 12 mini muffin tins with nonstick spray. Set aside.

Combine all ingredients.

Transfer to mini muffin tins.

Bake for 30-35 minutes.

Immediately transfer to cooling rack. Enjoy :)
